Ginger loaf

Yummy! How about making this for the weekend?

Serves 6

Preparation time: 10 min

Baking time: 50 min

200 g dates, pitted

5 ml (1 t) bicarbonate of soda

250 ml (1 c) boiling water

75 g butter

175 g treacle sugar

2 ml (½ t) ground ginger

3 eggs

225 g self-rising flour

3 pieces preserved ginger, chopped


100 g caster sugar

30 g butter

125 ml (½ c) double cream

1 Preheat the oven to 180 °C. Grease a 15 x 8 x 5 cm loaf tin.

2 Put the dates in a bowl with the bicarbonate of soda and boiling water.

3 In a large mixing bowl whisk together the butter and sugar until pale. Add the ground ginger. Add the eggs one at a time, whisking well after each addition.

4 Add the flour then pour in the dates with their soaking liquid and stir to mix well. Sprinkle the ginger pieces on top and pour into the loaf tin.

5 Bake for 50 minutes or until a skewer inserted in the middle comes out clean. Set aside to cool.

6 Caramel: Heat the sugar in a small saucepan over medium heat for 3 minutes or until it starts to turn golden. Add the butter, stirring until melted, pour in the cream and stir until smooth and slightly thickened. Spoon over the cooled ginger loaf.
