Grilled pork chop with fruit sambal

The sambal recipe is an absolute winner, especially when served with pork

Preparation time: 15 min

Cooking time: 30 min

Serves 4-6

4-6 pork loin chops

salt and freshly ground black pepper


1 red onion, halved and thinly sliced

1 pineapple, cubed

2 Granny Smith apples, cored and cubed

1 avocado, cubed

a handful of flat-leaf parsley, roughly chopped

30 ml (2 T) white balsamic vinegar

Preheat the oven to 190°C.

Season the pork with salt and pepper and seal the chops in a hot pan, 1 minute on each side.

Place on a baking sheet and cook in the oven for 10-15 minutes until cooked .

Mix all the sambal ingredients together, season with salt and pepper and pour the vinegar over the sambal.

Can be served with extra salad leaves.
