Grilled tomatoes on toast

Serves 2-4

Preparation time: 5-10 min

Cooking time: about 15 min

3 large plum tomatoes, halved

1 red pepper, halved

salt and freshly ground black pepper

60 ml (¼ c) fresh oregano

10 ml (2 t) olive oil

6 slices bread of your choice

6 slices ham

12 slivers of Parmesan cheese

oregano to garnish

Preheat the oven to 180 °C.

Put the tomato halves on a baking sheet with the cut side up. Put the pepper halves on the baking sheet with the skin

side up.

Season the tomatoes with salt, pepper, oregano and olive oil and grill for about 15 minutes.

Toast the bread in a toaster or on both sides on a heated griddle pan, drizzling with extra olive oil.

Put a slice of ham on each slice of toast and add half a tomato. Skin the pepper halves, cut the flesh into strips and arrange on top of each tomato half.

Garnish with Parmesan cheese shavings and oregano and serve hot or cold.
