Guava-marinated ribs

The guava and rib flavours are a match made in heaven!

Serves 4-6 Cooking: 1 hr 15 min Preparation: 10 min Cooling: 20 min

  • 2 kg pork ribs
  • 2 litres water


  • 6 guavas, peeled
  • 80 ml (? c) oil
  • juice and zest of 1 orange
  • 500 ml (2 c) guava juice
  • 2 chillies, roughly chopped, optional
  • 30 ml (2 T) Worcestershire sauce
  • handful fresh coriander

Preheat the oven to 200 °C.

1Place the ribs in a large pot, cover with the water, bring to the boil and simmer for 45 minutes. Carefully remove the ribs with tongs to a baking sheet and leave to cool for 20 minutes.

2 Basting: Placeall the ingredients in a blender and pulse until smooth.

3 Baste the cooled rib with the sauce and roast in the oven for 30 minutes until golden brown. Keep basting every 5 minutes until done. Serve with the fresh coriander.
