Serves 4

about 1,5 kg good-quality boerewors

4-6 hotdog rolls

20 ml olive oil

1 large onion, sliced

1 clove garlic, finely chopped

20 ml balsamic vinegar

15 ml (1 T) soft brown sugar

1 can (410 g) tomatoes

5 ml (1 t) Worcester sauce

salt and freshly ground black pepper

Brush a griddle pan with a little oil and put the sausage in the pan.

Switch on the stove plate and heat the pan over very low heat.

Fry the sausage over low heat until done.

Do not turn the sausage unnecessarily; only turn it when it begins to brown underneath and no longer sticks to the pan.

Meanwhile heat the olive oil in a saucepan and fry the onion and garlic until fragrant.

Add the remaining ingredients and simmer for about 15-20 minutes.

Season if necessary.

Once the sausage is done leave it for a few minutes.

Cut the sausage into large pieces.

Halve the rolls and put a piece of sausage in each.

Spoon the sauce on top and serve with a salad.
