Lamb chops with minty peas

What a treat - and it's all ready to serve in less than half an hour!

Serves 4

Preparation time: 5 min

Cooking time: 20 min

4 lamb chops

30 ml (2 T) olive oil

½ lemon juice

salt and freshly ground black pepper

1 brinjal, sliced


400 g frozen peas, cooked

handful of fresh mint, chopped

salt and freshly ground black pepper

1    Sprinkle the chops with 15 ml (1 T) olive oil, the lemon juice, salt and pepper. Heat a pan and cook the chops until done to your liking. Remove from the heat and set aside.

2    Brush the brinjal slices with the remaining oil and cook in the same pan for 5 minutes.

3    PEAS: Process the peas, mint, salt and pepper with a stick blender to a form a chunky purée.

4    Serve the lamb chops with the brinjals and minty peas.
