Lemon curd tart with berries

A delightfully delicious treat for the weekend

Serves 4

Preparation time: 15 min

Cooking time: 25 min

juice of 2 lemons

30 ml (2 T) grated lemon zest

125 ml (½ c) caster sugar

15 ml (1 T) cornflour

2 eggs

2 egg yolks

50 g butter

400 g puff pastry

handful of berries

icing sugar to dust

1 Preheat the oven to 180 °C. Line a baking sheet with baking paper.

2 Mix the lemon juice, zest, sugar, cornflour, eggs and yolks in a saucepan over medium heat. Cook, stirring, for 10 minutes or until thick. Whisk in the butter and remove from the heat. Allow to cool.

3 Cut the pastry to 30 × 20 cm. Cut strips from the remaining pastry and arrange around the edge of the base to form a frame. Prick the pastry with a fork and transfer to the prepared baking sheet. Bake for 15 minutes. Allow to cool.

4 Pour the lemon curd into the pastry case.

5 Before serving, top with berries and dust with icing sugar.
