Lemon meringue tartlets

And to think this takes only 15 minutes to make - yes, please!

Makes 12

Preparation time: 5 min

Cooking time: 10 min

1 can (382 g) condensed milk

4 eggs, separated

zest and juice of 2 lemons

250 ml (1 c) sugar

pinch of cream of tartar

12 sweet tartlet cases, baked

1 Preheat the oven to 180 °C

2 Whisk the condensed milk, egg yolks, lemon zest and juice in a bowl until everything is well combined.

3 Whisk egg whites in a separate bowl until frothy then whisk in the sugar a spoonful at a time. Whisk in the cream of tartar with the last spoonful.

4 Spoon the lemony condensed milk into the tartlets until almost full. Spoon or pipe the meringue over the top. Bake in the oven for 10 minutes or until golden on top.
