Lentil and sausage bake

Serves 2-4

Preparation time: 10 min

Cooking time: 20-30 min

30 ml (2 T) oil

1 onion, finely chopped

3 cloves garlic, crushed

3 carrots, scraped and sliced

500 ml (2 c) brown or red lentils

1 liter (4 c) water

1 bay leaf

salt and freshly ground black pepper

5 ml (1 t) dried mixed herbs

3 Russian sausages, sliced

30 ml (2 T) finely chopped parsley to garnish

Heat the oil and fry the onion, garlic and carrots for about 5 minutes.

Add the lentils, water and bay leaf and bring to the boil.

Reduce the heat and simmer until the lentils are cooked.

Season with salt, pepper and the mixed herbs.

Heat a pan and fry the Russian sausages for a few minutes or until golden brown.

Add the sausages to the lentil mixture.

Garnish with the parsley and serve with a green salad.
