Liquorice cupcakes

We show you how to make a sweet treat with a different twist.

Makes 12 cupcakes Preparation time: 15 min Baking time: 15-20 min 

  • 125 g soft butter
  • 200 ml sugar
  • 5 ml (1 t) vanilla essence
  • 2 extra-large eggs
  • 500 ml (2 c) cake flour
  • 10 ml (2 t) baking powder
  • 1 ml (¼ t) salt
  • 160-180 ml (²/3-¾ c) milk
  • plain butter icing
  • liquorice strings, separated into strands and chopped

  1. Preheat the oven to 190 °C. Line the hollows of a deep muffin pan with paper cups. Cream together the butter and sugar until the mixture is pale and fluffy.
  2. Whisk in the vanilla essence and eggs. Sift together the cake flour, baking powder and salt three times. Fold the dry ingredients into the butter mixture, alternating with the milk.
  3. Spoon the batter into the paper cups and bake for 15-20 minutes or until done and a skewer inserted in the middle comes out clean.
  4. Leave to cool. Decorate with the butter icing and liquorice.
