Loorita's beer prawns

Serves 6

Preparation time: 10-15 min

Standing time: overnight

Cooking time: 20 min in total

2 cans (330 ml each) beer

60 ml finely chopped parsley

100 ml fresh lemon juice

200 ml olive oil

10 garlic cloves, crushed

salt and freshly ground black pepper

Tabasco sauce to taste but enough to add bite

60 prawns, cleaned

100 g butter

50 ml oil

extra lemons, cut into wedges

Mix the beer, parsley, lemon juice, olive oil, garlic, salt, pepper and Tabasco sauce.

Arrange the prawns in a glass bowl and pour over the marinade.

Leave overnight.

Heat the butter and 50 ml oil in a large pan and fry the prawns in batches until just done.  Be careful not to overcook them – they’re done in minutes.

Serve with thin potato chips and extra lemon wedges
