Microwave chicken and mushroom stew

A quick and easy stew that can be prepared in the microwave.


Serves 4

Preparation time: 10 min

Cooking time: 12 min

2 tomatoes

30 g butter

3 spring onions, chopped

3 garlic cloves, chopped

4 chicken pieces

salt and pepper

250 ml (1 c) tomato purée

1 red chilli, chopped

7 ml (1½ t) Worcester sauce

10 mushrooms, sliced

30 ml (2 T) honey

1        Put the tomatoes and 250 ml (1 c) boiling water in a bowl and microwave on high for 2 minutes. Remove and immerse in cold water. Peel, cut into half, deseed and cut into cubes.

2        Mix the butter, spring onions, garlic, chicken, salt and pepper in a deep microwave-safe bowl. Cover and cook on high for 4 minutes. Add the tomato cubes, tomato purée, chilli, Worcester sauce and mushrooms.

3        Cover and cook on high for 3 minutes. Stir the honey into the cooking liquid and cook the stew on high for a further 2 minutes. Serve with pap or other starch of your choice.
