Microwave savoury mince enchilada

Savoury mince is one of those standbys everyone should know how to cook. Make extra and freeze it so you can use it for lasagne, chilli con carne or cottage pie.

Serves 4 Preparation: 10 min Cooking: 10 min

1 onion, chopped

1 garlic clove, chopped

1 carrot, diced into pea-size pieces

300 g lean beef mince

1 can (400 g) chopped tomatoes

60 ml (¼ cups) beef stock

5 ml (1 t) dried mixed herbs

salt and pepper

4 tortillas

handful of grated Cheddar cheese

1  Put the onion, garlic and carrot in a microwave-safe bowl. Mix in the mince with a fork, breaking up the meat until the ingredients are well combined. Cover the bowl with clingfilm, leaving a small gap for steam to escape, and microwave on high for 3 minutes.

Remove the bowl, stir again to break up the mince, cover and microwave on high for a further 1 minute.

3  Add the tomatoes, stock and herbs to the bowl. Mix well, cover again and microwave on high for 3 minutes. Season with salt and pepper.

4  Spoon about 60 ml (¼ c) of the savoury mince onto each tortilla. Roll up tightly. Arrange seam-side down on a greased microwave plate. Sprinkle cheese over the enchiladas and microwave on high for 2 minutes or until the cheese has melted and is bubbly.
