Mince puffs

These simple bite-sized pies are great for entertaining.

Makes: 15 Preparation: 10 min Cooking: 30 min

  • 15 ml (1 T) oil
  • ½ onion, finely chopped
  • 1 garlic clove, crushed
  • 400 g beef mince
  • 15 ml (1 T) red curry paste 250 ml (1 c) frozen mixed vegetables
  • 60 ml (¼ c) water
  • a handful of coriander leaves, chopped
  • 2 X 400 g puff pastry
  • 1 egg, lightly beaten
  • chutney, to serve

1. Heat the oil in a pan over medium heat, then add the onion and garlic and fry until soft. Add the mince and curry paste, cook for 5 minutes while stirring.

2. Add the mixed vegetables and water. Let simmer for 3 minutes. Add coriander. Set aside to cool.

3. Roll out the pastry over a lightly floured surface. Cut out tea-cup-sized rounds and place 2 tablespoons of mince mixture on each. Press the edge together to seal. Repeat with the remaining mince and pastry.

4. Brush with egg and bake for 20 minutes or until golden. Serve with the chutney.
