Mince with beans

Super simple, healthy and tasty.

Serves: 4 Cooking: 20 min Preparation: 10 min

  • 45 ml (3 T) olive oil
  • 30 g butter
  • 2 onions cut into strips
  • 4 cloves garlic, finely chopped
  • 30 ml (2 T) harissa paste
  • 300 g pork mince
  • 700 g cherry tomatoes, halved
  • 250 ml chicken stock
  • 400 g thin green beans
  • handful coriander, chopped
  • salt and pepper

1.Heat oil and butter until hot in large frying pan. Stir-fry the onion, garlic, harissa paste and mince for 5 minutes or until golden brown. Add the tomatoes and chicken stock. Reduce the heat and simmer until the tomatoes are soft and mushy.

2. Place the green beans in a pot filled with water and boil for 8 minutes or until cooked. Remove and place in ice-cold water.

3. Stir in the coriander and season the mince with salt and pepper. Serve the beans with the mince.
