Minestrone soup

A whole lot of goodness - in a bowl of soup

Serves 6

Preparation time: 5 min

Cooking time: 20 min

45 ml (3 T) oil

1 onion, chopped

3 garlic cloves, chopped

200 g mixed greens (peas, green beans, broccoli and green pepper)

1 can (410 g) chopped tomatoes

750 ml (3 c) vegetable stock

macaroni pasta (optional)

1 can (400 g) white beans

salt and freshly ground black pepper

1    Heat the oil in a saucepan and sauté onion until translucent. Add the garlic, remaining vegetables and tomatoes and cook for 5 minutes.

2    Add the stock and pasta (if using). Simmer for 10 minutes.

3    Stir in the beans, heat through and season with salt and pepper. Serve with chunks of Italian bread.
