Mini meat loaves with bacon and honey

A very different way of serving meat loaves - with a great sweet and salty topping

Makes 9

Preparation time: 10 min

Cooking time: 30 min

500 g beef mince

2 tomatoes, chopped

1 onion, grated

handful of parsley, chopped

60 ml (¼ c) breadcrumbs

1 egg

15 ml (1 T) Worcester sauce

15 ml (1 T) brown grape vinegar

salt and pepper

250 g streaky bacon

45 ml (3 T) honey

1    Preheat the oven to 180 °C.

2    Combine the mince, tomatoes, onion, parsley, breadcrumbs, egg, Worcester sauce, brown vinegar, salt and pepper in a bowl.

3    Grease 9 mini bread tins and line each with a bacon rasher. Compress the mince mixture in your hand and press into the bread tins to fill. Bake for 20 minutes.

4    Turn the meat loaves out onto a baking sheet. Brush with the honey and return to the oven for 10 minutes or until golden.
