Mint and mousse fruit pudding

Serves 6-8

Preparation time: 20 min

Chilling time: overnight 

500 ml (2 c) cream

1 can (410 g) pears, thinly sliced

6 bananas, thinly sliced

200 g (1 packet) ginger biscuits, crushed

100 g blueberries

300 ml chocolate mousse

100 g mint chocolate, grated or crushed

1         Whip the cream until stiff peak form and chill in the fridge for 15 minutes.

2         Arrange a layer of pear slices in the bottom of a glass bowl, followed by a layer of banana slices.

3         Spoon about 30 ml (2 T) cream on the bananas, add a sprinkling of biscuit crumbs over, a few berries and a layer of mousse.

4         Repeat the layers, ending with the remaining cream. Sprinkle the mint chocolate over and chill overnight in the fridge.
