Mock pizza

Serves 4 

400 g puff pastry (keep an eye out for Wooworths’ Butter Puff Pastry)

60 ml (1/4 c) sun-dried tomatoes in olive oil, sliced

2 smoked chicken breasts, sliced

100 g mozzarella cheese, sliced

30 g rocket

Preheat the oven to 200 °C.

Gently roll out the pastry on a floured surface and transfer it to a large greased baking sheet.

Arrange the sun-dried tomatoes and chicken breast and mozzarella cheese slices on top.

Bake for 15-20 minutes or until done.

Cut the pizza into wedges and scatter the rocket on top.

Tip: Thaw the pastry in the fridge overnight and remove it from the fridge just before using. The pastry rises best when very cold so, time permitting, chill the assembled pizza in the fridge for about 10 minutes just before baking it.
