Moroccan mince with couscous

A yummy Moroccan dish with very little effort

Serves 6

Preparation time: 10 min

Cooking time: 20 min

15 ml (1 T) oil

500 g ostrich mince

2 onions, chopped

15 ml (1 T) ground cumin

5 ml (1 t) ground cinnamon

10 ml (2 t) turmeric

125 ml (½ c) dried apricots, chopped

500 ml (2 c) chicken stock

500 ml (2 c) couscous

2 red chillies, chopped

zest of 1 lemon

coriander to garnish

1      Heat the oil in a pan, add the mince and cook gently for 10 minutes until browned. Add the onions and spices. Stir in the apricots and stock and simmer for 20 minutes.

2      Cook the couscous according to the packet instructions. Using a fork, stir in the chillies and lemon zest.

3      Spoon the couscous into plates, top with the mince mixture and garnish with coriander.
