Mutton bredie with fried banana

Serves 4

Preparation time: 20 min

Cooking time: about 1 hour

30 ml (2 T) oil

2 onions, sliced

1 clove garlic, crushed

1 small green pepper, seeded and quartered

2 chillies, finely chopped (optional)

2 carrots, cut into long thin strips

1 turnip, diced

500 g mutton rib, cut into small pieces (see tip)

5 ml (1 t) ground coriander

salt and freshly ground black pepper

juice and rind of 1 orange

1 can (410 g) chopped tomatoes

500 ml (2 c) cooked dried beans (use any dried beans)

30 ml (2 T) butter

3 bananas, sliced

Heat half the oil and fry the onions, garlic, green pepper, chillies (if using), carrots and turnip for about 5 minutes over high heat.

Remove the vegetables and heat the remaining oil.

Brown the meat, season with the ground coriander, salt and pepper and add the orange juice and rind.

Cover, reduce the heat and simmer for 40-60 minutes or until the meat is tender.

Add the vegetables, tomatoes and cooked beans to the meat, mix well and heat through.

Heat the butter in a separate pan and fry the banana slices until golden brown.

Spoon on top of the meat just before serving.
