One-dish Mexican meal

The eggs are cooked in the mince. Rope in the kids to help and serve the dish for brunch.

Serves 4-6

Preparation time: 15-20 min

Cooking time: 30-40 min

30 ml (2 T) olive oil

1 onion, finely chopped

2 cloves garlic, finely chopped

1 red chilli, finely chopped


500 g mince

salt and freshly ground pepper

1 carrot, finely grated

1 can (400 g) chopped tomatoes

1 can (400 g) baked beans

30 ml (2 T) chutney

4-6 eggs

125 ml (½ c) grated Cheddar cheese

extra finely chopped chilli (optional)

finely chopped fresh coriander

Heat the oil in a large shallow pan and fry the onion, garlic and chilli (is using) until soft. Add the mince and fry until done. Season with salt and pepper. Add the carrot, tomatoes, baked beans and chutney and simmer for about 30 minutes. Season if necessary. Make holes in the  mince mixture and carefully break an egg into each. Cover the pan with a lid or aluminium foil and simmer over low heat until the eggs are done. Sprinkle with cheese and garnish with extra chilli (if using) and coriander.
