One-pot chicken

How about a complete and delicious meal, made in one pot only in less than an hour?

Serves 6

Preparation time: 10 min

Cooking time: 30 min

30 ml (2 T) oil

1,5 kg chicken pieces

1 onion, chopped

3 leeks, chopped

15 ml (1 T) paprika

4 garlic cloves, chopped

1 can (410 g) whole plum tomatoes

3 sprigs thyme

2 bay leaves

5 potatoes, cubed

500 ml (2 c) chicken stock

salt and pepper

handful of parsley, chopped

1    Heat the oil in a saucepan over medium heat and brown the chicken on all sides.

2    Add the onion, leeks and paprika cook, covered with a lid, over medium-low heat for 10 minutes.

3    Stir in the garlic, tomatoes, thyme, bay leaves, potatoes and stock, season with salt and pepper and simmer for 15 minutes or until the potatoes are soft. Sprinkle parsley over.
