Onion and fig pizza

A fabulous recipe to make your own pizza base and irresistible toppings for Meatless Monday

500 g flour

7 g yeast

pinch of salt

325 ml (1½ c) warm water


80 g mascarpone cheese

250 ml (1 c) sour cream

salt and black pepper

1 red onion, sliced

handful of fresh basil

12 figs

1 Mix the flour, yeast and salt in a large bowl. Gradually add the water, mixing until a soft dough forms.

2 Turn the dough out on a clean surface and knead for 5 minutes or until smooth. Transfer to a clean bowl, cover with a damp cloth and leave in a warm place to rise for 1 hour.

3 Preheat the oven to 200 °C. Divide the dough in half, roll out each piece as thinly as possible and transfer to baking sheets.

4 Topping: Combine the cheese, sour cream and salt and pepper, spread over the pizza base and top with the onion slices. Bake for 15 minutes or until golden. Remove from the oven, sprinkle with basil and top with the figs.
