Onion soup

Nothing says "welcome home" like a wonderful aromatic soup in winter

Serves 6

Preparation time: 5 min

Cooking time: 25 min

50 g butter

4 onions, chopped

15 ml (1 T) dark brown sugar

4 sprigs of thyme

3 bay leaves

125 ml (½ c) cider

750 ml (3 c) vegetable stock

bread, thickly sliced

1 In a saucepan over low heat melt the butter, add the onions, sugar and thyme cook, stirring, for 10 minutes or until sticky.

2 Add the bay leaves and cider and simmer until reduced. Pour in the stock and simmer for 25-30 minutes over low heat.

3 Preheat the grill on high.

4 Butter the bread on both sides and arrange on a baking sheet. Toast under the grill until browned on both sides. Tear into chunks and serve on top of the onion soup.
