Orange rice pudding

Rice pudding with an orange twist - highly recommended

Serves 4

Preparation time: 5 min

Cooking time: 35 min

Chilling time: 1 hour

zest of 1 orange

500 ml (2 c) water

15 ml (1 T) butter

250 ml (1 c) Arborio rice

250 ml (1 c) milk

125 ml (½ c) caster sugar

2 cinnamon sticks

125 ml (½ c) mascarpone cheese

5 ml (1 t) vanilla essence

ground cinnamon to garnish

1 Combine the orange zest, water and butter in a pot and bring to the boil. Add the rice and return to the boil, reduce the heat and simmer for 15 minutes until the water has been absorbed.

2 Bring the milk, sugar and cinnamon sticks to a boil in another pot. Add the boiled rice and simmer over low heat, stirring, for 15 minutes or until the liquid has been absorbed. Stir in the mascarpone cheese and vanilla essence.

3 Let the pudding cool, cover and refrigerate for 1 hour. Sprinkle with ground cinnamon before serving.
