Outstanding bread pudding

Oh yes, why not finish off this week with a delicious treat?

Serves 8 and more

Preparation time: 5 min

Standing time: 1 hour

Cooking time: 1 hour

6 hot cross buns, torn into chunks

1 Madeira loaf, torn into chunks

1 banana loaf, torn into chunks

100 g butter, melted

6 eggs

250 ml (1 c) caster sugar

500 ml (2 c) cream

500 ml (2 c) milk

grated zest of 1 orange

grated zest of 1 lemon

5 ml (1 t) vanilla essence

icing sugar and cinnamon to dust

1 Grease an ovenproof dish.

2 Arrange the hot cross buns in the dish, top with the Madeira cake pieces then the banana bread.

3 Whisk together the butter, eggs, caster sugar, cream, milk, zest and vanilla until well combined. Pour over the torn cakes and press the mixture down.

4 Allow to stand for 1 hour to soak up the custard.

5 Preheat the oven to 180 °C.

6 Bake for 1 hour or until set. When cooled, dust with sugar and cinnamon.
