Peanut butter fudge

A deliciously indulgent treat for spoiling your family and friends.

Makes 70 pieces Preparation: 15 min Cooking: 4 min

  • 125 g butter
  • 560 ml (2¼) dark brown sugar
  • 125 ml (½ c) milk
  • 500 ml (2 c) crunchy peanut butter
  • 2 ml (½ t) vanilla seeds
  • 620 ml (2½ c) icing sugar

1 Melt the butter in a saucepan over medium heat. Stir in the brown sugar and milk, bring to the boil and continue boiling for 2 minutes without stirring.

2 Remove from the heat and stir in the peanut butter and vanilla seeds.

3 Put the icing sugar in a large bowl and pour the hot sugar mixture on top. Using a wooden spoon, beat the mixture until smooth.

4 Pour into a 20 cm square baking tin and set aside to cool completely. Remove from the pan and use a sharp knife to cut the fudge into squares. Store in an airtight container.
