Poached pear with cheese salad

Serves: 4


400 g (1 can) pears, drained (keep some syrup)

5 ml (1 t) ground cinnamon

250 ml (1 c) red wine

120 g Asian-style lettuce leaves, washed

1 of each green, yellow, red pepper

100 g cherry tomatoes

10 g blue or pecorino cheese, crumbled


60 ml (¼ c) white wine

10 g pecorino/blue cheese

45 ml (3 T) honey

Salad In a sealable container, add pears, cinnamon, red wine and some of the reserved syrup.

Cover and gently mix, making sure you don’t break the pears. Place in the refrigerator for 2 hours or make a day ahead.

Dressing In a blender pour the wine, cheese and honey and blend for 1 minute to combine the ingredients.

Remove and set aside.

Place greens on a large plate, slice the peppers and arrange on the greens followed by the tomatoes, drained pears and cheese sprinkled on top.

Drizzle or place the dressing with the salad and serve.
