Pork and anchovy surf and turf

A delicious combo of taste and texture - ready to serve in less than an hour!

Serves 4-6

Preparation time: 10 min

Cooking time: 45 min

15 ml (1 T) oil

400 g boneless pork, cubed

200 g spiced pork sausage, such as chorizo

1 onion, sliced

1 red chilli, chopped

3 garlic cloves, chopped

250 ml (1 c) chicken stock

1 can (410 g) whole tomatoes

5 anchovies, chopped

handful of parsley, chopped

15 ml (1 T) honey

1    Heat the oil in a frying pan, add the cubed pork and fry for 5 minutes or until browned. Add the sausage and cook for 3 minutes. Remove the meat from the pan.

2    Return the pan to the heat and sauté the onion and chilli for 2 minutes or until the onion is translucent. Add the garlic and stock, return the meat to the pan and simmer for 15 minutes.

3     Add the tomatoes, anchovies and parsley and simmer for a further 20 minutes. Stir in the honey.

4    Serve with hot bread.
