Pork and potato croquettes

Makes 24 Preparation: 15 min Cooking: 25 min

  • 300 g pork mince
  • ½ onion, minced
  • 10 ml (2 t) sugar
  • 15 ml (1 T) soy sauce
  • 2,5 ml (½ t) five-spice
  • 500 ml (2 c) mashed potatoes
  • salt and pepper
  • 30 ml (2 T) flour
  • 1 egg, lightly beaten
  • 250 ml (1 c) breadcrumbs

1. Mix the pork with the onion, sugar, soy and five-spice. Heat oil in a medium saucepan over medium heat and pan-fry the pork until cooked and crumbly. Allow to cool.

2. Mix the pork mince into the mashed potatoes and taste. Season accordingly with salt and pepper.

3. Using your hands, shape the mashed potato mixture into balls. Dip them in the flour, then the egg then the breadcrumbs. Heat about 500 ml (2 c) of oil in a deep-sided pot. Deep-fry the croquettes until crisp and golden brown. Drain them on paper towels.
