Pork chops with warm potato salad

Serves 4

Preparation time: 15 min

Cooking time: 25 min

400 g baby potatoes

200 g tenderstem broccoli

1 red onion, sliced

15 ml (1 T) oil

60 ml (¼ c) slivered nuts

salt and pepper


4 pork chops


15 ml (1 T) butter

1 onion, chopped

200 g mushrooms, sliced

1 garlic clove, chopped

5 ml (1 t) flour

45 ml (3 T) water

1.    Preheat the oven to 200 °C.

2.    Put the potatoes, broccoli and onion slices on a baking sheet and drizzle with the oil. Roast in the oven for 25 minutes, adding the nuts for the last 5 minutes of the cooking time.

3.    Pork chops: Meanwhile cook the chops and keep warm.

4.    Sauce: In a pan over medium heat melt the butter and sauté the onion until soft. Add the mushrooms and increase the heat. Add the flour, stirring until it’s well mixed with the ingredient in the pan. Pour in the water and stir until a smooth sauce develops.

5.    Add the cooked potatoes and broccoli to the mushroom sauce and serve with the pork chops.
