Pork noodles

Serves: 4-6 Preparation: 5 min Cooking: 15 min

  • 300 g pork, sliced into strips
  • 2,5 ml (½ t) corn starch
  • 2,5 ml (½ t) light soy sauce
  • 2,5 ml (½ t) dark soy sauce
  • a pinch of sugar
  • 45 ml (3 T) oil, divided
  • 200 g mushrooms, thinly sliced
  • 400 g noodles
  • a handful of baby spinach

1. Mix together the pork, corn starch, soy sauces and sugar. Set aside for 5 minutes.

2. Heat 15 ml (1 T) oil in a pan over high heat. Add the pork and stir-fry until browned. Turn down the heat, remove the pork from the pan and set aside. Add the remaining oil to the pan and sauté the mushrooms for 2 minutes. Break up the noodles gently with your hands and add them to the pan.

3. Stir-fry everything together until the noodles get an even, deep-brown colour. Add more soy sauce if preferred. Add the spinach, mix with the noodles until wilted and serve.
