Pork nek chops, complimented by sweet potato, all wrapped in a foil parcel over slow coals on the braai....mouthwatering!

Serves 6

Preparation time: 20 min

Cooking time: 40-50 min

6 deboned pork neck chops (or a cut of your choice)

salt and freshly ground black pepper

2 sweet potatoes, sliced and parboiled

2 large apples, cut in rings and parboiled

30 ml (2 T) butter

30 ml (2 T) light brown sugar

  1. Season the chops with salt and pepper, and brown quickly over hot coals.
  2. Tear off six large sheets of aluminium foil and place a chop in the middle of each sheet. Top with the sweet potato and apple slices and dot with the butter. Sprinkle with the sugar.
  3. Fold the foil over the contents and transfer the parcels to a braai grid. Braai for 15-20 minutes over slow coals, turning often, until the meat and sweet potatoes are cooked.
  4. Serve with a side dish of green beans wrapped in bacon then braaied.
