Pork stew

Serves 4

300-500 g of pork, cut into strips

salt and pepper

125 ml flour

15 g butter

15 ml olive oil

1 onion, chopped

2 garlic cloves, chopped

1 red chilli, chopped (optional)

2 cans (410 g each) of chopped tomatoes

fresh basil and parsley, chopped

cooked pasta or rice

1.    Season the pork strips with salt and pepper and dust with flour.

2.    Heat the butter and half the oil in a saucepan and fry a few pork strips at a time. Set aside once all the pork has been fried.

3.    Heat the rest of the oil and fry the onion, garlic and chilli. Add the tomatoes and simmer over low heat for 5-10 min.

4.    Return the fried pork to the saucepan and the freshly chopped herbs and bring to the boil. Season and serve with pasta or rice.
