Pork with coconut and sweet potato

Here's one of our delicious everyday-easy recipes

Serves 4

Preparation time: 5 min

Cooking time: 20 min

30 ml (2 T) oil

250 g pork fillet, sliced

salt and pepper

2 ml (½ t) caraway seeds

2 ml (½ t) coriander seeds

2 ml (½ t) cumin seeds

3 whole cloves

250 ml (1 c) coconut milk

2 garlic cloves, chopped

1 green chilli, chopped

10 g fresh coriander leaves


250 g sweet potatoes, cubed

1 can (400 ml) coconut milk

salt and pepper

30 g baby spinach

1 Heat the oil in a pan over medium heat and fry the pork until browned and tender. Set aside.

2 To the same pan add the caraway seeds, coriander seeds, cumin seeds and cloves and heat until fragrant. Remove from the pan, place in a grinder and grind.

3 Returnthe spices  to the pan, add the coconut milk, garlic and chilli and simmer until thickened.

4 Stir in the coriander and spoon the sauce over the meat.

Sweet potatoes: Cook the sweet potatoes in the coconut milk until done and season with salt and pepper. Stir in the spinach and serve with the pork.
