Pulled pork

Pulled pork make for an interesting version of a traditional burger

Serves 4

Preparation time: 10 min

Cooking time: 2½ hours

45 ml (3 T) brown sugar

30 ml (2 T) paprika

2 ml (½ t) mustard powder

salt and pepper

30 ml (2 T) oil

500 g boneless pork joint

500 ml (2 c) apple juice

125 ml (½ c) water

4 hamburger rolls

coleslaw to serve

1    Preheat the oven to 180 °C.

2    Mix the sugar, paprika, mustard, salt, pepper and oil and rub over the pork.

3    Put the pork on a rack over a roasting pan, making sure the pork doesn’t touch the base. Pour the juice and water into the roasting pan, cover with foil and roast for 2 hours. Remove the foil and roast for a further 30 minutes until the meat is lightly charred.

4    Remove from the rack and allow to cool. Using two forks or your fingers, shred the meat.

5    Cut open the rolls, spoon coleslaw onto the bottom halves and add the shredded meat. Spoon a little of the roasting liquid onto the top halves, put on top of the meat and serve.
