Pumpkin chilli

Add a dash of chili and some creative thinking - and you've got a lovely meal that will impress your loved ones

Preparation time: 10 min

Cooking time: 50 min

Serves: 6

10 ml (2 t) oil

1 kg beef, minced

1 onion, chopped

1 green pepper, chopped

500 g pumpkin, cooked and puréed

2 × 410 g whole tomatoes

500 ml (2 c) beef stock

5 ml (1 t) chilli powder

salt and freshly ground black pepper to taste

15 ml (1 T) fresh coriander

410 g (1 can) cannellini beans

nachos to serve

Add oil to a saucepan on medium heat. Add and brown the mince.

Add the onion and pepper and cook until the onion is soft.

Add the pumpkin, tomatoes, stock, chilli powder, salt and pepper and coriander.

Stir well and simmer for 30 minutes, add the beans and simmer for an extra 10 minutes.

Serve with nachos.
