Pumpkin loaf

Pumpkin is easily one of the most under-rated vegetables of the day - but it's so versatile

Preparation time: 1 hour

Baking time: 35 min

Serves: 6

7 egg yolks

2 large eggs

30 ml (2 T) sugar

60 ml (¼ c) maple syrup

30 ml (2 T) butter

a pinch of salt

5 ml (1 t) ground cinnamon

2,5 ml (½ t) nutmeg

2,5 ml (½ t) ground ginger

250 g pumpkin, cooked and pureed

750 ml (3 c) bread flour

10 g yeast

Preheat the oven to 180 °C.

In an electric mixer on slow add all the ingredients except the flour and yeast.

Mix the flour and yeast and slowly add to the mixer until slightly sticky dough forms.

Cover the bowl and let it rise in a warm place for 1 hour.

Divide the dough into 3 equal parts and braid into 1 large loaf.

Place on a greased baking sheet and cover to rise for 30 minutes.

Place in the oven and bake for 35 minutes or until a skewer comes out clean.
