A fun Friday night meal!

Serves 2 Preparation time: 5 min Cooking time: 20 min

  • 15 ml (1 T) oil
  • 1 red pepper, chopped
  • ½ green pepper, chopped
  • 250 ml (1 c) sweetcorn kernels
  • 4 tortillas
  • 250 ml (1 c) mozzarella cheese

1. Heat the oil in a pan over medium heat. Add the peppers and corn, and cook for 3 minutes before transferring to a bowl.

2. Return the pan to the heat. Place a tortilla in the pan and add about 60 ml of the cheese and cooked vegetables. Fold the tortilla in half to close the quesadilla. Flip with a spatula and cook for 2 minutes on each side.

3. Repeat until all the tortillas are done, then slice in half.
