Quick 'n easy quesadillas

Throw these budget-friendly ingredients together in a pan for a fiesta in your mouth.

Serves: 6 Preparation: 10 min Cooking: 10 min

  • 8 tortillas
  • 100g cottage cheese
  • 250g cheddar cheese, grated
  • 2 tomatoes, chopped
  • 1 green pepper, chopped
  • 1 red chilli, chopped
  • 100 g ham, chopped
  • 10 ml (2 t) oil

1. Spread each side of the tortillas with cottage cheese.

2. Top each of the four tortillas with 125 ml (½ cup) cheese, handful tomatoes, pepper, chilli and ham. Brush the edges of the tortillas with water. Top with the remaining tortillas and press the edges to seal.

3. Lightly oil the pan over medium heat. Brush the tops of the quesadillas with the oil. Place the quesadillas oil-side down on the pan. Brush the other side of the quesadillas with the oil.

4. Grill for five minutes or until the cheese is melted, turning the quesadillas over once halfway through the grilling time. Remove the quesadillas from the grill and let stand for two minutes.

5. Cut each quesadilla into four wedges.
