Quick salad

Ready in minutes, this salad is great for work lunch and after gym sessions.

SERVES 4 Preparation: 30 min

  •  120 g packet mixed lettuce
  • 400 g beetroot , roasted
  • 3 eggs, hard-boiled and quartered
  • 300 g smoked chicken, sliced
  • 1 avocado, sliced
  • 150 g cherry tomatoes, halved
  • 100 g bacon, cooked and chopped
  • 300 g salad dressing

1. Arrange the lettuce on a salad plate, followed by the rest of the ingredients. Pour the dressing over just before serving.
