Red berry tartlets

These tartlets are delicious served with a scoop of ice cream.

These tartlets, which you make in the microwave, are delicious served with a scoop of ice cream.

Makes 12-15 tartlets

Baking time: 10-12 min


500 g mixed frozen berries

45-60 ml (3-4 T) caster sugar juice and zest of 1 lemon


180 ml (¾ c) milk

160 ml (2/3 c) oil

2 eggs 300 ml cake flour 15 ml (1 T) baking powder 1 ml (¼ t) salt 60 ml (¼ c) caster sugar

  1. Filling Put the filling ingredients in a microwaveproof glass bowl and microwave for 3 minutes or until the mixture is syrupy.
  2. Drop spoonfuls of the berry mixture in the hollows of a silicone muffin pan and set aside (reserve the liquid).
  3. Crust Mix the ingredients and pour over the filling in the muffin pan.
  4. Stir gently to create a marbled effect.
  5. Microwave for 4-6 minutes or until the batter is springy to the touch.
  6. Serve upside down with ice cream and the reserved liquid.
