Rice casserole

Dolores Adams of Austerville sent us this tasty sausage and rice casserole recipe.

Preparation time: 5 min

Cooking time: 30 min

Serves: 6

5 ml (1 t) oil

6-8 pork sausages

250 g button mushrooms, quartered

2 onions, chopped

410 g (1 can) cherry tomatoes

30 ml (2 T) tomato paste

5 ml (1 t) smoked paprika

250 ml (1 c) rice

750 ml (2 ½ c) vegetable stock

In a large saucepan, heat the oil and fry the sausages for 4-5 minutes.

Remove them from the pan.

In the same pan fry the mushrooms until cooked and set aside.

Add the onions to the pan and fry until soft.

Add the tomatoes and paste and cook for 2 minutes.

Add the smoked paprika and stir in the rice.

Add the stock and simmer until the rice is cooked.

Return the mushrooms and sausages to the pan and heat until warmed through.
