Rice stir-fry

Serves 4

30 g butter

30 ml oil

2 large carrots, diced

6 spring onions, finely chopped

1 clove garlic, finely chopped

1 large onion, finely chopped

200 g smoked sausages, cut into pieces

Salt and pepper to taste

2 eggs, whisked

Few drops soy sauce

500 ml cooked rice

200 g peas

Handful coriander, roughly chopped

1. Heat a little of the butter and oil and fry the vegetables over high heat for a few minutes.

2. Add the sausages and fry until done. Season with salt and pepper, remove from the pan and set aside.

3. Heat the remaining butter and oil in the pan and add the eggs, stirring until done.

4. Return the sausage mixture to the pan and add the remaining ingredients. Heat through and season to taste.
