Roast chicken and roast veg

The wonderful aroma of chicken roasting in the oven really makes you feel at home

Preparation time: 5 minutes

Cooking time: 40 minutes

Serves: 4-6

chicken portions

10 ml (2 t) BBQ spice

10 ml (2 t) chicken spice

10 ml (2 t) garlic flakes

15 ml (1 T) olive oil

2 red onions, quartered

6-8 baby potatoes, halved

6-8 baby marrows, cut into chunky pieces

3 carrots, cut into chunky pieces

salt and freshly ground black pepper

10 ml (2 t) olive oil

Preheat the oven to 180 °C.

Place the chicken portions into an ovenproof roasting pan, rub with the spices and drizzle over the oil.

Roast for 40 minutes uncovered.

Place all the veggies in a roasting dish, season with salt and pepper and drizzle with oil.

Add to the chicken halfway through roasting time and roast for the remaining 20 minutes. Serve warm.
