Roast pumpkin with sage

This is unpretentious food at its best. Think about it – slices of pump-kin, skin and all, baked to perfection with a whole garlic bulb and fresh sage.

You will need:

About 2kg pumpkin

Sea salt and freshly ground black pepper

Olive oil A handful of fresh sage leaves 1 garlic bulb, broken into cloves but left unpeeled Crust:

Preheat the oven to 200 °C. Scrub the pumpkin but do not peel. Cut it into thin wedges and remove the seeds. Arrange the wedges in a single layer on a baking sheet or in a baking dish. Season with salt and pepper and sprinkle lightly with olive oil. Add the sage and garlic cloves to the pumpkin. Roast one rack above the middle of the oven for about 30 minutes or until tender. Just before serving, squeeze the garlic out of the skins and spread it over the pumpkin.
