Roast rib of beef

Serves 4

1 kg rib of beef (cut into 5 cm pieces) Salt and freshly ground black pepper 30 ml chutney 30 ml Worcester sauce 30 ml tomato sauce 40 ml olive oil 4 large potatoes 50 ml milk butter 30 ml parsley

Preheat the oven to 160 °C.

Season the meat with salt and pepper and arrange in an ovenproof dish.

Mix together the chutney, Worcester and tomato sauces and olive oil and pour the mixture over the meat.

Cover with aluminium foil and roast for 40 minutes.

Remove the foil and roast for another 20 minutes or until done and crisp.

Peel and cube the potatoes and cook them in salted water until soft.

Drain and mash with a potato masher.

Stir in the milk, butter and parsley and serve with the rib of beef and a fresh salad.
