Salami and olive pizza

Readymade pizza bases are available in most supermarkets so keep a supply in your freezer to assemble quick meals.

Makes 4 pizzas

4 medium readymade pizza bases

80 ml (1/3 c) tomato salsa

about 25 slices salami

200 g olives, drained, pitted and halved

about 20 capers

100 g goat’s milk cheese, sliced

250 ml (1 c) grated Cheddar cheese

30 ml (2 T) fresh oregano

extra olive oil and watercress for garnish

Preheat the oven to 200 °C.

Spread the pizza bases with the tomato salsa.

Divide the salami, olives, capers, goat’s milk cheese slices, Cheddar cheese and oregano among the pizza bases   bake each pizza for 10-15 minutes or until done and golden.

Drizzle a little olive oil over each pizza and pile watercress on top.
