Salmon trout salad

Spend quality time with your loved ones over a beautiful salad - quick and easy to make

Serves: 4

2 panini loaves

45 ml (3 T) butter

1 avocado, sliced

juice of 1 lemon

1 cucumber

60 ml (¼ c) olive oil

salt and freshly ground black pepper to taste

30 ml (2 T) mixed seeds (pumpkin, sesame, poppy seeds)

200 g salmon trout

fresh herbs (coriander, micro herbs, watercress and fennel)

1.    Cut the paninis in half and square equal sizes and butter both sides. Place the avocado in a bowl with the lemon juice. Using a peeler, cut the cucumber lengthwise.

2.    Lightly toast the seeds in a dry pan on medium heat. Mix the olive oil and salt and pepper and set aside.

3.    In a pan on high heat place the buttered bread and toast on both sides until golden. Place each slice on a serving plate, then top with cucumber, salmon, avocado and herbs. Drizzle over the olive oil, salt and pepper mixture and sprinkle over the seeds.
